  I rarely order enchiladas in a Mexican restaurant, because of the extra sauce they come with. I saw this Joanna Gaines' recipe and decided to give it a try. It turned out very delicious. The dish is very flavorful and I definitely recommend it! Ingredients (for 3- 4 Servings) :  2 tbsp. olive oil 1/2 white onion 1 cup chicken broth 1/2 15-ounce can black beans, rinsed and well drained 1/2 can (5oz) of condensed cream of chicken soup 1 7-ounce jar salsa verde 7- ounce can mild enchilada sauce  4-ounce sour cream 1/2 tbsp. smoked paprika 1/2 tsp. garlic salt 1/2 tsp. salt 1/2 tsp. black pepper 3 cups shredded rotisserie chicken 4-ounce can fire roasted green chiles 5 corn tortillas, cut into 3/4 inch wide strips 2  cups grated Cheddar cheese 1 cup grated Monterey Jack cheese Step-by-step instructions:  1.                                                                   I almost never crave chocolate deserts, but one day I was in a mood for a cake, and this is the recipe that caught my attention. It was my first time baking a cake; surprisingly it was easy to make!   I saw this recipe in Joanna Gaines' cookbook. I've always been looking for a good recipe and this one caught my attention. It didn't disappoint- the pancakes turned out very delicious!  This is   definitely my “to go” recipe.

                                                               A very delicious pizza Ingredients :  Dough (from the previous recipe) 1 tsp butter at room temperature  Basil pesto Your choice of veggies (for this recipe I used 1/2 bell pepper, 2 cloves of garlic, 4-5 cremini mushrooms, 1 tomato, 2 green onions) 1/2 cup mozzarella cheese (or a cheese blend You can add meat of  your choice, such as ham or pepperoni. Step-by-step instructions:  1. Preheat oven to 450F. 2.   Butter a baking/ pizza dish and arrange a thin layer of the dough 3. Spread butter on the dough and cover evenly with pesto sauce 4. This is an universal recipe that can be used for any baking dish, such as sweets or pizza. Also, it’s easy to prepare :) Ingredients: 1/2 cup water 1/2 cup milk 1/3 cup butter 3 tbsp sugar (or 1/3 cup sugar if making deserts) 1 package yeast (7 g) 1 egg  3 3/4 cup flour 1 tsp salt Step-by-step Instructions: 1. Combine water, milk, butter, and sugar in a small saucepan. Warm up the mixture until temperature reaches 120F. 2. In a large bowl, mix the warm mixture with the yeast. Let it stand for 10 min.    3. Add the egg to the mixture.  Use a mixer to combine.  4. Add 2 1/2 cup flour and 1 teaspoon salt and mix on high speed for 3 min 5. Add the remaining flour and use a wooden spoon to combine. 6. Knead by hand for 5 min on a lightly floured surface. 7. Cover and let stand for 1 hour or overnight in the fridge.

Baked Eggplant with Spinach

  Baked Eggplant with Spinach and Bell Pepper This is a Keto recipe that I like to prepare when I am craving a healthy meal. It is simple but delicious! Please keep in mind that the following ingredients are for 1 person (there are no leftovers:) Ingredients: 1 large eggplant cut into small cubes (or 2 small eggplants- I like using the Japanese eggplant) 1/2 bell pepper, chopped 1 cup chopped fresh baby spinach 1/2 cup shredded cheese (It's your personal choice- You can use mozzarella, Havarti, or a blend- in this case I used goat cheese, cheddar, and parmesan) 1 egg salt and black pepper to taste 1 jalapeno (optional) Preparation: 1. Preheat oven to 350F. Grease  an oven safe dish   with oil. 2. Mix all the ingredients together and bake for 40 minutes or until done. 3. Enjoy!

Red Thai Curry with Chicken

      Delicious and easy Thai Chicken Curry I made this recipe once, and it turned out really good, so I had to save it on my phone! I haven't tried another curry recipe afterwards. I highly recommend it, let me know how you like it :) Ingredients: 1/2 onion 3 cloves garlic 1 tbsp. crated ginger 1 tsp yellow curry powder 3 tbsp. red curry paste 2 tsp coriander 3 chicken breasts (cubed and spiced with salt and black pepper) 1 can coconut milk 1 tbsp. lime juice, 1 tsp. brown sugar Vegetables (I use 1 large carrot, 1 large potato and 1 bell pepper) Preparation: 1. Heat 2 tbsp. coconut oil on medium high heat. Add the onion and sauté for 3 min. Add the garlic and ginger. 2. Lower heat to low and add the 2 curries and coriander. Cook until fragrant (2-3 minutes). 3. Add 1 tbsp. coconut oil and the chicken. Cook for 2-3 min. so the chicken becomes fragrant. 4.
