Home-made Flour Tortilla

  Once you try these tortillas, you won't buy from the store again! They are easy to make, and you can eat them on their own when hot (I usually melt some cheese). Ready to give it a try? INGREDIENTS (18 TORTILLAS) 1 lb. all purpose flour 1 tbsp salt 1 tbsp baking powder 2 1/2 oz melted unsalted butter 1 to 1 1/4 cup warm filtered water STEPS: 1. Combine the flour, salt and baking powder and beat on slow speed for 30 seconds. (I use KitchenAid stand mixer; paddle attachment) 2. Gradually add the melted butter and and beat until the mixture is a course meal 3. Change with the dough hook and add the water slowly until the dough comes together (2-3 minutes on low speed) Increase the speed to minimum and continue mixing until the dough becomes very soft, shiny, and elastic (you may need to add more water) 4. Remove the dough and cover it with plastic wrap and let it rest at room temperature for 30-45 min. 5. Portion the dough roughly in the size of golf balls. Place them in a parchment...

Muhammara Dip

I've tried several muhammara dips throughout the years, and this is probably my favorite. If you are looking for healthy and delicious dip, give it a try! You can eat it with your choice of vegetables (I prefer carrots) or spread it on a sourdough toast. It is vegan and gluten free. The recipe is from the Fiber diet cookbook Ingredients  (for 2 cups) : 6 large bell peppers (I sometimes buy the 6-pack variety from Costco and that's what I used to when I took this picture) 1 cup raw walnuts, chopped  2 tablespoons olive oil ¼ cup freshly squeezed lemon juice ¼ cup balsamic vinegar  1 teaspoon ground cumin  1 teaspoon sea salt, plus more to taste  ½ teaspoon crushed red pepper flakes Instructions: 1. Preheat the oven to 450°F. The best pork chops ever!

Pork chops have never been part of my meal plan. Ever since I discovered this recipe, I am tempted to cook it every time the pork chops are on sale :)  And who would've thought about using garam masala as the main seasoning? At least not me- I've always associated this spice with Indian dishes. Give it a try and let me know how you like it! Ingredients  (for 4 Servings) : 4 thin, bone-in, center-cut pork chops 4 garlic cloves, minced 2 tsp garam masala 1/4 tsp black pepper 3 tbsp unsalted butter 1 large shallot, thinly sliced 2 cups unthawed frozen green peas 1 cup thinly sliced radishes 1/4 cup chopped fresh cilantro 1 tsp grated lemon zest Instructions: 1. Preheat oven to 400F. Combine 2 tsp salt, black pepper, garlic, and garam masala. Rub the mixture on the pork chops and let them stand for 10 min. 2.                                                                A very delicious pizza Ingredients :  Dough (from the previous recipe) 1 tsp butter at room temperature  Basil pesto Your choice of veggies (for this recipe I used 1/2 bell pepper, 2 cloves of garlic, 4-5 cremini mushrooms, 1 tomato, 2 green onions) 1/2 cup mozzarella cheese (or a cheese blend You can add meat of  your choice, such as ham or pepperoni. Step-by-step instructions:  1. Preheat oven to 450F. 2.   Butter a baking/ pizza dish and arrange a thin layer of the dough 3. Spread butter on the dough and cover evenly with pesto sauce 4. Cut the veggies and arrange them on the dough. (You may add some salt and pepper to taste). Top with the cheese. 4. Bake for approximately 10 min until crisp. Add fresh basil l...

This is an universal recipe that can be used for any baking dish, such as sweets or pizza. Also, it’s easy to prepare :) Ingredients: 1/2 cup water 1/2 cup milk 1/3 cup butter 3 tbsp sugar (or 1/3 cup sugar if making deserts) 1 package yeast (7 g) 1 egg  3 3/4 cup flour 1 tsp salt Step-by-step Instructions: 1. Combine water, milk, butter, and sugar in a small saucepan. Warm up the mixture until temperature reaches 120F. 2. In a large bowl, mix the warm mixture with the yeast. Let it stand for 10 min.    3. Add the egg to the mixture.  Use a mixer to combine.  4. Add 2 1/2 cup flour and 1 teaspoon salt and mix on high speed for 3 min 5. Add the remaining flour and use a wooden spoon to combine. 6. Knead by hand for 5 min on a lightly floured surface. 7. Cover and let stand for 1 hour or overnight in the fridge.
