Buttermilk Pancakes

I saw this recipe in Joanna Gaines' cookbook. I've always been looking for a good recipe and this one caught my attention. It didn't disappoint- the pancakes turned out very delicious!

This is definitely my “to go” recipe.

Ingredients:

(For four Servings)

2 cups flour
2 tsp baking soda
1 tbsp baking powder
1/4 cup sugar
1 tsp salt
2 cups buttermilk
2 large eggs
1/2 cup coconut oil (or vegetable oil)

Step-by-step Instructions:

  1. In a large bowl combine dry ingredients (flour, baking soda, baking powder, salt, sugar)
  2. In a small bowl whisk together the buttermilk, eggs, and oil.
  3. Pour the liquid ingredients into the flour mixture and stir together until combines. Let stand for 20-30min.

  4. Heat a small skillet (small enough to form 1 pancake) with 1 tsp butter
  5. Cook until the top is bubbly; flip the pancake and cook until lightly browned on the other side. Repeat to make the rest of the pancakes.

  6. Serve with butter and maple syrup
    Enjoy!
