Naan with Avocado and Scallion Salsa

 



I was skeptical to try this new recipe so I only prepared a single portion. It turned out to be very delicious, so I had to make it again the next day! If you love avocado toast, and you are looking for a new twist, this is the recipe for you!

Ingredients (for 1 Serving): 

1 Naan bread 
1 ripe avocado
2 tsp. virgin olive oil (plus more for brushing)
1 tsp. coriander seeds
1 tsp. cumin seeds
4 green onions
1/3 jalapeno pepper
1/4 cup chopped cilantro or parsley
Zest and juice of 1/4 lemon





Step-by-step instructions: 

1. Toast the coriander and cumin seeds in a dry skillet over over medium heat, shaking often, until fragrant (about 2-3 min.) Transfer to a spice mill. Let cool and coarsely grind.

2. Place scallions with 1/2 tbsp oil in skillet, season with salt, and cook, turning occasionally, until softened and deeply charred. Transfer to a cutting board, and finely chop them. 

3. Please the scallions in a small ball and add the spices, jalapeno, cilantro, and lemon zest and juice.

4. Add 2 tsp. oil and salt to taste. Stir well to combine

5. Warm the naan on the stove (according to the heating instructions provided on the package), brush with oil. Coarsely smash the avocado onto bread and spoon scallion salsa over. (I also add some black pepper to taste)
